Tomato Soup for your Soul
I don’t know where to start, so I’ll start with one of our favorite things – good food! We have the honor and privilege to grow most of the food that we eat. I do this to nourish my family in a profound, deeply rooted way. To raise my kids with the best possible nutrition that money can’t buy, and to eat some really yummy food that is a showcase of hard work, lessons learned, and the regenerative possibilities of this magical earth. That said, here is the recipe for some tomato soup that will heal your soul and your body.
Sautee your onions in a heaping dollop of animal fat ( I used flavored lard leftover from making rilletes. You could use bacon fat, tallow, lard, or duck fat). This takes longer than you think it should and is worth the wait.
In the last two minutes, add in a few cloves of minced garlic.
Add in your tomato base. We used homemade reduced tomato sauce from this January’s abundance. If you are using canned tomatoes, you might try shredding some carrots to saute down with your garlic, to balance the acidity of the tomatoes.
Add in your broth. We used smoked pork bone broth. I don’t love the flavor of pork broth just for sipping, so I like to add it into dishes with other strong flavors to lead the dish.
Simmer for 15 minutes minimum to meld the flavors. If you like it really smooth, blend your soup with an immersion blender or (carefully) blend in the blender.
Add fresh chopped basil from the garden, and few twists of fresh ground pepper. Served with toasted sourdough and homemade cheese.
